The recipe for these sushi first appeared in 1973, in the US state of the same name. The author of California is Japanese emigrant Ithiro Manasita, owner of the Tokyo Kaikan restaurant in Los Angeles. He quickly realized that Japanese and American tastes are somewhat different. And he created a roll with ingredients that were more familiar to Americans and Europeans. Sushi California consisted of fresh cucumber, crab meat and avocado pulp.
